Turkey Cranberry Tea Party Sandwiches

Turkey Cranberry Tea Party Sandwiches are a delicious addition to a holiday tea party or lunch. With green spinach leaves and red dried cranberries in a cream cheese spread, the festive colors go perfectly with a Christmas theme. Kid friendly and can be adapted for gluten free.

Years ago when I started having tea parties for my girls, a friend recommended finding recipes on Tea Time Magazine. I quickly found these sandwiches and saved the recipe for a Christmas tea party. I love the red and green colors! These would also be cute at a Valentine’s tea party.

Recipe Details

These sandwiches are super simple and only take minutes to make. A slightly sweetened cream cheese blend is combined with chopped dried cranberries. Then the cream cheese mixture is spread on all of the slices of bread and topped with turkey. Baby spinach is added to half the bread slices and the other half are turned over onto the spinach to make 12 complete sandwiches.

To make these tea sandwiches, the crusts are cut off and the square sandwiches are cut into triangles by cutting them in half diagonally.

My girls really like these sandwiches. The spinach is easy to pick off by some of the pickier ones who shall remain nameless. Bob really liked these sandwiches too. I’ve mentioned before in this recipe for Caramelized Apples Stuffed Chicken with Fontina and Cherries that he likes meat with fruit, so he enjoyed the combination of the sweet cranberries with the savory turkey.

Ingredients
  

  • 6 ounces cream cheese (softened)
  • ½ cup dried cranberries (finely chopped )
  • 1 teaspoon sugar
  • 1 teaspoon lemon juice
  • 1/8 teaspoon salt
  • 24 slices sandwich bread (wheat or white)
  • ½ pound thinly sliced deli turkey
  • 2 cups baby spinach

Instructions
 

  • In a medium bowl, stir together the cream cheese, cranberries, sugar, lemon juice, and salt, until well combined. Spread an even amount of cranberry cream on each slice of bread.
  • Distribute the turkey evenly among the 24 slices of bread, then top 12 of the bread slices evenly with the baby spinach. Flip the 12 slices containing only the cream cheese and turkey onto the bread slices with the spinach to make 12 complete sandwiches.
  • Cut off the crusts of each sandwich, and cut each sandwich in half diagonally.
