Savory Roasted Sweet Potatoes are tossed in a seasoned BBQ rub and roasted until soft on the outside and a bit crispy on the outside. They can be a side dish for steak or chicken or used for breakfast.
I serve these on the side of steak or chicken. My favorite way to serve them is as a breakfast skillet with poached eggs and cut up chicken breakfast sausage. We have these for dinner often.
Ingredients
- Sweet potatoes
- Olive oil
- Three Little Pigs Championship BBQ Rub, or your favorite BBQ rub
Note: if your BBQ rub does not contain salt, you will need to add salt separately.
Prepare and Season the Potatoes
Wash the sweet potatoes. You can leave the peel on or peel the potatoes. I make them both ways depending on how I feel.
Dice the sweet potatoes into about ½-inch cubes.
Place the diced sweet potatoes on an aluminum foil lined baking sheet.
Drizzle with olive oil, then sprinkle with your favorite BBQ rub. We like Three Little Pigs Championship Rub.
I like to sprinkle a generous amount of rub.
Toss the potatoes to coat in the oil and seasoning.
Roast the Potatoes
Roast the potatoes in a 375°F oven for 20 minutes, then use a spatula to mix the potatoes around and rotate the tray.
Continue to roast until the potatoes are tender and are starting to form a crispier exterior, mixing the potatoes around ever 10 to 15 minutes.
Gluten Free Option
This recipe is naturally gluten free. Check to make sure your BBQ rub does not contain gluten.

Roast the Potatoes
- Place the baking sheet in the oven and roast the potatoes for 20 minutes. Then use a spatula to mix the potatoes around and rotate the tray.
- Continue to roast until the potatoes are tender and are starting to form a crispier exterior, mixing the potatoes around ever 10 to 15 minutes. The total cook time will range from 30 to 45 minutes depending on your preference. The longer the potatoes cook, the more of a crispy exterior they will develop.
