These potatoes are great with chicken. I like to serve them alongside Chicken Marbella. They would be great with Spicy Roasted Chicken, Roasted Chicken with Garlic Pan Sauce, Garlic Braised Chicken Thighs with Carrots, or Mushroom and Herb Stuffed Chicken Breasts.
These potatoes would also go great with steak or a beef or pork roast.

Garlic Roasted Red Potatoes
Ingredients
- 3 pounds small red potatoes
- ¼ cup olive oil
- 1 ½ teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons minced garlic (6 cloves)
- 2 tablespoons minced fresh parsley (or 2 teaspoons dried parsley)
Instructions
- Preheat the oven to 400°F.
- Cut the potatoes into quarters.3 pounds small red potatoes
- In a large bowl, combine the olive oil, salt, pepper and garlic.¼ cup olive oil, 1 ½ teaspoons kosher salt, 1 teaspoon freshly ground black pepper, 2 tablespoons minced garlic
- Add the potatoes to the oil mixture and toss to coat.
- Transfer the potatoes to a sheet pan lined with aluminum foil and evenly distribute the potatoes into a single layer.
- Roast the potatoes for 45 minutes to 1 hour, flipping every 15 minutes. The potatoes should be browned and crisp when finished.
- Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.2 tablespoons minced fresh parsley
