freshly ground black pepper

minced garlic

minced fresh parsley
or 2 teaspoons dried parsley
Instructions
Preheat the oven to 400°F.
Cut the potatoes into quarters.
3 pounds small red potatoes
In a large bowl, combine the olive oil, salt, pepper and garlic.
¼ cup olive oil,
1 ½ teaspoons kosher salt,
1 teaspoon freshly ground black pepper,
2 tablespoons minced garlic
Add the potatoes to the oil mixture and toss to coat.
Transfer the potatoes to a sheet pan lined with aluminum foil and evenly distribute the potatoes into a single layer.
Roast the potatoes for 45 minutes to 1 hour, flipping every 15 minutes. The potatoes should be browned and crisp when finished.
Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.
