Pencil and Ruler Wafer Cookie Cupcakes are a fun and easy treat to celebrate the start of a new school year!

When my oldest daughter started Kindergarten, I started making a School Bus Cake to celebrate the first day of school. This was an idea I adopted from a friend of mine who did this for her children.
Now that my kids no longer ride a bus, I have had to come up with other back-to-school treats for their after school snack on the first day. Pinterest never disappoints for these kinds of tasks!
I found the idea for these cute pencil and ruler wafer cookies. I couldn't decide which was cuter, so I made both! You could make these alone, or use them as a cupcake topper like I did.

Ingredients
- 1 box of cake mix, prepared according to package directions
- 2 batches Easy Vanilla Buttercream
- Vanilla wafer cookies
- Pink candy melts or pink food coloring
- Mini chocolate chips
- White frosting or buttercream
- Black frosting
Materials
- Disposable piping bags
- Pink foil cupcake wrappers
- Large star tip like 2D
Decorate the Pencil Cookies
To make the pencil wafers, use a sharp knife to cut the corners off of the narrow end of the cookie, making it into a point.

Repeat with the rest of the cookies that you will be making into pencils. I did this for 6 cookies.

Melt some pink candy melts in a bowl and carefully spread onto the squared off end of each pencil cookie to resemble the eraser. Alternatively, you can tint some buttercream or white frosting with pink food coloring and do the same thing with it.

Spread some of the un-tinted buttercream or frosting on the pointed end to resemble the wood of the pencil.

Then place a single mini chocolate chip on the point to resemble the pencil lead.

Repeat with the remaining cookies. Allow the candy melts to set at room temperature.
Decorate the Ruler Cookies
To decorate the ruler cookies, place some black frosting in a disposable piping bag with the tip cut off.
Carefully pipe lines on one side of the wafer cookie, with longer lines at positions 1, 5, 10, 15, and so on, depending on how far your lines are spaced.

Repeat with the remaining wafers. Allow the icing to set at room temperature.

Assemble the Cupcakes
After the cupcakes have baked, make sure they are completely cool.

Pipe on the buttercream using a large star tip, like a 2D.

Place a single wafer cookie on top of each cupcake, in the buttercream so it will stick.

Repeat with the remaining cookies.

Store the cupcakes in an airtight container at room temperature until serving.
If you choose to refrigerate them, make sure they come up to room temperature before consuming or the buttercream will not be soft.

Gluten Free Option
Use a gluten free cake mix and gluten free vanilla wafer cookies.

- 12 Pink foil cupcake wrappers
Ingredients
- 12 cupcakes (from a mix prepared according to package directions)
- 2 batches Easy Vanilla Buttercream
- 12 Vanilla wafer cookies
- Pink candy melts or pink food coloring
- 6 Mini chocolate chips
- White frosting or buttercream
- Black frosting
Instructions
- Prepare cake batter from a mix. Bake it into 12 cupcakes using pink foil liners. Set the cupcakes aside to cool.
Decorate the Pencil Cookies
- Use a sharp knife to cut the corners off of the narrow end of the cookie, making it into a point.
- Repeat with the other 5 cookies that will become pencils.
- Melt some pink candy melts in a bowl and carefully spread onto the squared off end of each pencil cookie to resemble the eraser. Alternatively, you can tint some buttercream or white frosting with pink food coloring and do the same thing with it.
