2batches Easy Vanilla Buttercream
12Vanilla wafer cookies
Pink candy melts or pink food coloring
6Mini chocolate chips
White frosting or buttercream
Black frosting
Instructions
Prepare cake batter from a mix. Bake it into 12 cupcakes using pink foil liners. Set the cupcakes aside to cool.
Decorate the Pencil Cookies
Use a sharp knife to cut the corners off of the narrow end of the cookie, making it into a point.
Repeat with the other 5 cookies that will become pencils.
Melt some pink candy melts in a bowl and carefully spread onto the squared off end of each pencil cookie to resemble the eraser. Alternatively, you can tint some buttercream or white frosting with pink food coloring and do the same thing with it.
Spread some of the un-tinted buttercream or frosting on the pointed end to resemble the wood of the pencil.
Then place a single mini chocolate chip on the point to resemble the pencil lead.
Repeat with the remaining cookies. Allow the candy melts to set at room temperature.
Decorate the Ruler Cookies
Place some black frosting in a disposable piping bag with the tip cut off.
Carefully pipe lines on one side of the wafer cookie, with longer lines at positions 1, 5, 10, 15, and so on, depending on how far your lines are spaced.
Repeat with the remaining 5 wafers. Allow the icing to set at room temperature.
Assemble the Cupcakes
After the cupcakes have baked, make sure they are completely cool.
Pipe on the buttercream using a large star tip, like a 2D.
Place a single wafer cookie on top of each cupcake, in the buttercream so it will stick. Repeat with the remaining cookies.
Store the cupcakes in an airtight container at room temperature until serving. If you choose to refrigerate them, make sure they come up to room temperature before consuming or the buttercream will not be soft.
