Snow Peak Frosting is an old fashioned marshmallow frosting that is similar to Seven-Minute Frosting. It is fluffy and perfect paired with coconut for Easter.

My grandma made Coconut Cake every year for Easter. Her coconut cake was made with a boxed white cake mix prepared using whole eggs rather than just egg whites, Snow Peak Frosting, and lots of sweetened coconut flakes.
Snow Peak Frosting is very similar to Seven-Minute Frosting, which has been made since the early 1900s. While Seven-Minute Frosting is made by dissolving sugar and egg whites over heat, Snow Peak Frosting uses hot light corn syrup mixed with egg whites. Both frostings are whipped for about 7 minutes to achieve a fluffy, marshmallow-like texture.
I prefer Snow Peak Frosting because it is easier to make, and I've had some trouble with the sugar re-crystalizing in Seven-Minute Frosting and becoming slightly gritty in texture.

I don't often bake with corn syrup, but this is one of the instances that I make an exception. Other instances include Homemade Vanilla Marshmallows and Chewy Coconut Oatmeal Cookies.
Recipe Details
To make the frosting, first the egg whites are beaten at high speed in an electric mixer with a whisk attachment until soft peaks form. Then the salt is added.
While the egg whites are whipping, the corn syrup is heated to a boil.
Once the egg whites are stiff, the hot syrup is slowly added to the egg whites while they are still being whipped. Once the mixture is fluffy with peaks, add the vanilla extract.
The frosting can be used immediately to frost a cake or cupcakes.

Storage
According to food safety guidelines, any frosting with eggs should be refrigerated.
That being said, my grandma always had this cake sitting out on her dining room buffet on Easter. I'm guessing she made it the night before.
I always keep the leftover cake wrapped on the counter. I don't like cold cake or frosting. The eggs in this frosting are cooked by the hot syrup, so I don't know how different it is than a baked cake.
My advice is to use your best judgement and do what you are comfortable with.

Ingredients

Instructions
