Snow Peak Frosting is an old fashioned marshmallow frosting that is similar to 7 minute frosting. It is fluffy and perfect paired with coconut for Easter.
Using a stand mixer with the whisk attachment, beat the egg whites at high speed until soft peaks form.
2 egg whites
Add the salt and beat for a few seconds to incorporate.
1 pinch salt
While the egg whites are beating, heat the corn syrup in a saucepan on the stove to a boil.
1¼ cups light corn syrup
Slowly add the hot syrup to the stiffened egg whites while the mixer is running. Beat until the frosting forms marshmallow-like peaks.
Beat in the vanilla extract.
1 teaspoon vanilla extract
Use immediately to frost a cake.
Notes
