Cucumber Bites are thick slices of cucumbers with an herbed cream cheese piped on top. They are perfect for a tea party or a low carb snack.

I made these Cucumber Bites for a spa day at my moms group many years ago at the same meeting where I led a Valentine Cookie Decorating station. They are so easy to make but so delicious.
The cucumber slices look pretty with the alternating peeled and unpeeled sections.
These would be perfect for a bridal shower, baby shower, or even a BBQ or event. Bonus: they are naturally low carb and gluten free!

Prepare the Cucumber Slices
I like the look of the striped peel on the sides, but you can peel them completely or leave the peel on, depending on your preference.
Make the Herbed Cream Cheese
In a medium bowl, combine all of the filling ingredients until fully combined. Make sure your fresh dill is minced well if you plan to pipe the filling, or the dill will clog the piping tip.
Pipe the Filling
Transfer the filling to a disposable piping bag fitted with a large decorative tip, like a 1M large star tip.
Pipe a mound of filling in a swirled pattern on top of each cucumber slice until all of them have filling on top.

Place the cucumber slices in the refrigerator, covered, until ready to serve.

Cucumber Bites with Herbed Cheese
Equipment
- 1 Disposable piping bag
- 1 large decorative tip like a large star tip
Ingredients
- 2 large English cucumbers
For the Filling:
- 4 ounces cream cheese (block style, at room temperature)
- 2½ ounces plain Greek yogurt
- 1½ tablespoons fresh dill (minced)
- ½ tablespoon powdered Ranch dressing mix (such as Hidden Valley)
Instructions
Prepare the Cucumber Slices:
- Wash and dry the cucumbers. If you want to have a striped look on the sides, use a vegetable peeler to peel small strips lengthwise on cucumber to create long stripes.2 large English cucumbers
- Slice cucumbers into rounds, about ½-inch thick.
Mix the Filling:
- In a small bowl, combine the filling ingredients. Mix thoroughly.4 ounces cream cheese, 2½ ounces plain Greek yogurt, 1½ tablespoons fresh dill, ½ tablespoon powdered Ranch dressing mix
Pipe the Filling:
- Arrange the cucumber slices on a serving platter.
- Transfer the cheese mixture to a piping bag fitted with a large star tip. Pipe a swirl of filling onto the top of each cucumber slice.
- Cover and refrigerate until serving. Serve chilled.
