Blueberry Cobbler is an easy, quick dessert that requires minimal preparation. This recipe can be made with fresh or frozen blueberries.
I love baking with blueberries because, unlike apples and peaches, they don't require any prep work. Blueberry Cobbler is even easier to make than a Blueberry Pie because the batter comes together in just minutes and is dropped on top of the filling.

Ingredients
- Sugar
- Cornstarch
- Lemon juice & zest
- Salt
- Blueberries
- Flour
- Baking powder
- Butter
- Milk
Prepare the Blueberry Filling
Combine the sugar, cornstarch, lemon juice and lemon zest in a large bowl.
Stir in the blueberries.
Make sure to evenly coat the berries.
Transfer the filling to a 9 by 13-inch baking dish and set aside to make the dough.
Prepare the Dough
Whisk together the flour, sugar, baking powder and salt.
Add the cold diced butter to the dry ingredients.
Using a pastry blender or two knives pulled in opposite directions, cut the butter into the dry ingredients until the butter looks like fine crumbs.
Add the milk and stir to combine.
Now you're ready to assemble the cobbler.
Bake and Serve the Cobbler
Drop the batter by 6 spoonfuls over the filling. You can spread the dough out a bit if desired.
Sprinkle the sugar on top of the dough.
Bake until golden brown.
Serve warm with store bought or homemade vanilla ice cream.
Gluten Free Option
I have not tried it in this recipe, but I have good luck using a gluten free 1 to 1 baking flour, like Bob's Red Mill, in baked goods recipes.

Blueberry Cobbler
Ingredients
Blueberry Filling:
- ½ cup sugar
- 2 tablespoons cornstarch
- 2 tablespoons lemon juice (approximately 1 medium lemon)
- 2 teaspoons lemon zest (from a medium lemon)
- 1 dash salt
- 4 cups blueberries (rinsed and dried if fresh, or use frozen)
Cobbler Dough:
- 1 cup all purpose flour
- 1 tablespoon sugar
- 1 ½ tablespoon baking powder
- ½ teaspoon salt
- 3 tablespoon firm butter (diced into smaller pieces)
- ½ cup milk
Topping:
- 2 tablespoons sugar
Instructions
- Preheat oven to 400°F.
Make the Filling:
- Combine sugar, lemon juice and zest, cornstarch and salt in a large bowl.
- Toss with blueberries until evenly coated. Transfer the filling to a 9x13-inch baking dish.
Make the Dough:
- In a medium bowl, mix flour, sugar, baking powder and salt.
- Cut in butter using a pastry blender or two knives pulled in opposite directions until mixture looks like fine crumbs.
- Stir in milk.
Assemble and Bake:
- Drop dough by 6 spoonfuls onto the filling.
- Sprinkle the sugar on the dough.
- Bake 25 to 30 minutes until topping is golden brown.
- Serve warm with ice cream, if desired.
