This Edible Cookie Moss is made with tinted crushed shortbread cookies. The moss can be used to decorate a woodland or fairy themed cake, or even a Snow White Cake.

For my youngest daughter's Snow White Birthday Party, I made a Snow White Doll Cake. Rather than just have Snow White on a round cake platter, I decided to decorate a rectangular cake board to include a forest floor with some woodland creatures.
I wanted to add moss to the forest floor to mimic enchanted woods, so I decided to use Edible Cookie Moss.
This method is so easy and takes just a few minutes, but the resulting edible moss looks realistic and adds whimsy to a woodland dessert.

While I used it for a Snow White Cake, this moss could be added to any forest or woodland themed dessert or even a fairy themed cake!
Supplies
- store bought or homemade shortbread cookies
- food processor or meat tenderizer mallet
- green and yellow food coloring gel, such as AmeriColor or ChefMaster
- toothpicks
Make the Cookie Moss
I like to start with store bought shortbread cookies because they are crispy and can be crushed into fine crumbs.

Add the cookies to the bowl of a food processor. Pulse until the cookies have been crushed into small crumbs. Transfer the crumbs to a bowl.

Dip a toothpick into green food coloring get and transfer a very small amount of the gel onto the crumbs. Repeat this process with the yellow food coloring, using slightly less than the green, if you wish for the moss to be a lighter green. Adding the yellow is optional. You can always add more color, but you cannot take it away.
Stir the gels into the crumbs with a small silicone spatula or spoon until evenly distributed. Add more color if desired. I wanted the moss to be a light green color, but you can go for a vibrant green moss or any shade of green that fits with your theme.

Storage
Cookie moss can be stored in an airtight container at room temperature for several weeks.
Uses
The cookie moss can be used to decorate any kind of dessert, including cakes, cupcakes, brownies, trifles and more.
For this Snow White Doll Cake, I spread a layer of Easy Chocolate Buttercream on a cake board to represent the dirt of the forest floor. This allows the cookie moss to stick to the board when sprinkled on top.

I also added some of the moss to the stump of wood that is covered in ganache.
