These Easy Easter Bunny Peep Cookies are so adorable and simple to make. You can choose to do the front or the back of the bunny. Using shortbread cookies makes them egg free.

Each spring, Marshmallow Peeps start populating stores. I think the Bunny Peeps are so cute.
I even made my girls these "Chillin' with my Peeps" shirts when they were younger.

When I decided to make these cookies, I wanted to use the 3 colors represented on the girls' shirts because I think they look so cute together.

I added store bought black frosting dots to represent the peep faces. I also made a few of the back of the bunnies with a little cotton tail.

You can use any color of sanding sugar you like, and you can do all faces, all tails, or some of each.
Materials
- 1 batch of Shortbread Cookies (egg free) or Cut Out Sugar Cookies, cut with a Bunny Peep cookie cutter
- Powdered sugar
- Milk
- Vanilla or almond extract
- Blue, purple and pink sanding sugar
- Black icing
- White icing
- Disposable piping bags
- Plastic tip couplers
- Small round tip, like a #5
- Small star tip
Because you will only need a very small amount of black and/or white icing, I recommend buying a tube of black or white frosting. It will save a lot of time and, due to the very small amount used, will not impact the overall flavor of the cookie.
Dip the Cookies
Place a wire rack over a parchment or waxed paper lined cookie sheet or work surface.
Make the cookie glaze by gently stirring the icing ingredients together in a small bowl with a small spatula until it is fully mixed.

Transfer the glaze to a small shallow dish.
Dip the top surface of each cookie into the icing. Allow the excess glaze to run off back into the dish.
Immediately after dipping, sprinkle a single color of sanding sugar completely over the cookie, then shake off the excess.
Place the cookie on the wire rack. Repeat with the remaining cookies, varying the color of sanding sugar.
Allow icing to fully dry before decorating.
Add the Details
To make bunny peep faces, transfer black icing to a disposable piping bag fitted with a small round tip. Pipe on two eyes and a mouth by piping dots of black frosting.

To make bunny peep tails, transfer white icing to a disposable piping bag fitted with a small star tip. Pipe on a single bunny tail on each cookie by piping one star in the tail region.

Store the cookies in a single layer in an airtight container at room temperature.
Gluten Free Option
Use your favorite gluten free sugar or shortbread cookie recipe. Note that using a gluten free 1 to 1 baking flour in place of all purpose flour in a cookie recipe can sometimes produce a more fragile, crumbly cookie.
