Instructions
Make the Chocolate Covered Cherries
Remove the stemmed cherries from the jar and allow them to dry by placing them on a paper towel lined baking sheet.
Melt 5 ounces of chocolate on the stove in the top of a double boiler or in the microwave at 50% power in 30-second intervals until just melted.
Carefully dip the cherries into the chocolate and lay them on a waxed paper lined tray or plate on their sides with the stems facing one side, just how you will want them to be when they are finished.
Allow the chocolate to set and place them in the refrigerator until you're ready to assemble the mice, at least 30 minutes.
Assemble the Mice
Unwrap enough Hershey Kisses so you have 1 for each chocolate covered cherry you made. You will need twice as many almond slices as cherries because each mouse will need 2 ears.
Melt about 1 ounces of chocolate in the microwave at 50% power in 30 seconds intervals until just melted.
Dip a Hershey Kiss in the chocolate, then adhere it to the chocolate covered cherry on the side opposite the stem. The Hershey Kiss will be the mouse's head.
Slide the almond slices in between the kiss and the cherry. You may need to dip it lightly in the chocolate if you need more to get it to stick.
Repeat with the remaining cherries.
Store them in the refrigerator until ready to serve.
