BBQ Chicken Pizza is a quick and easy weeknight meal to use up leftover chicken, especially when you have some pizza dough ready to go. Reminiscent of the version of California Pizza Kitchen!
Place pizza stone in a cold oven. Heat oven to 500°F and preheat stone for at least 30 minutes, preferably 60 minutes.
Shape dough into a large round on a piece of parchment paper. Brush crust lightly with olive oil.
Transfer parchment paper with crust onto a pizza peel or baking sheet and slip onto the preheated baking stone. Prebake crust for 5 - 7 minutes until just starting to turn golden. Remove from oven, transfer parchment and crust to a work space.
Top crust with BBQ sauce as you would do with traditional pizza sauce. Add chopped chicken, chopped red onion, and shredded cheese.
Transfer parchment with pizza back onto the baking stone. Bake for 5 - 10 minutes (watch closely as ovens vary) until cheese is melted and crust is golden brown.
Slide pizza onto baking sheet or pizza peel and transfer to a large cutting board surface. Allow to cool for several minutes, slice, and top with fresh cilantro.
