Turkey Cranberry Tea Party Sandwiches are a delicious addition to a holiday tea party or lunch. With green spinach leaves and red dried cranberries in a cream cheese spread, the festive colors go perfectly with a Christmas theme.
- 6 ounces cream cheese (softened)
- ½ cup dried cranberries (finely chopped )
- 1 teaspoon sugar
- 1 teaspoon lemon juice
- 1/8 teaspoon salt
- 24 slices sandwich bread (wheat or white)
- ½ pound thinly sliced deli turkey
- 2 cups baby spinach
In a medium bowl, stir together the cream cheese, cranberries, sugar, lemon juice, and salt, until well combined. Spread an even amount of cranberry cream on each slice of bread.
Distribute the turkey evenly among the 24 slices of bread, then top 12 of the bread slices evenly with the baby spinach. Flip the 12 slices containing only the cream cheese and turkey onto the bread slices with the spinach to make 12 complete sandwiches.
Cut off the crusts of each sandwich, and cut each sandwich in half diagonally.
