Garlic Roasted Cauliflower is a healthy side dish that takes cauliflower to a new level. Roasting with olive oil and garlic enhances the flavor!
- 1 large head cauliflower (cut into florets)
- 4 large cloves garlic (minced or pressed)
- 2 tablespoons olive oil
- generous sprinkle of salt and pepper
- 1 tablespoon chopped parsley (or 1 teaspoon dried parsley)
Preheat oven to 450 degrees F.
In a large nonstick baking pan, combine all ingredients except for parsley, and toss to combine well.
Bake, tossing occasionally during baking, until lightly browned and softened, about 25-30 minutes.
Remove from oven, toss with parsley and serve immediately.
