Double Chocolate Banana Bread

This healthier version of double chocolate banana bread contains applesauce in place of butter or oil. A great way to use up those old bananas.

Ingredients
  

  • 2 eggs
  • 1/2 cup granulated sugar
  • 2/3 cup applesauce
  • 1 teaspoon vanilla extract
  • 2 cups mashed very ripe bananas (about 6 bananas)
  • 2 cups flour (all purpose or gluten free)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup cocoa powder
  • 1 cup chocolate chips

Instructions
 

  • Preheat oven to 350 degrees F.
  • Grease two 8-inch loaf pans.
  • In a medium bowl, sift together the flour, baking soda, baking powder, salt, and cocoa powder. Set aside.
  • In a large bowl, whisk together eggs, sugar, applesauce, vanilla, and bananas.
  • Add the dry ingredients to the wet and mix until just combined. Stir in the chocolate chips. You may reserve some to sprinkle on top of the batter.
  • Bake loaves for 45 - 60 minutes, until a toothpick comes out with only a few crumbs attached.
