Roasted Acorn Squash

Roasted Acorn Squash is a delicious seasonal side dish with brown sugar and butter.

Ingredients
  

  • 1 medium acorn squash (halved and seeded)
  • 2 Tablespoons butter
  • 4 Tablespoons brown sugar

Instructions
 

  • Preheat oven to 350 degrees F.
  • Turn acorn squash upside down (skin side up) onto an aluminum foil-lined baking sheet. Bake until squash begins to soften, approximately 30 to 45 minutes.
  • Remove squash from the oven and turn over so that the flesh is facing up. Place 1 tablespoon butter and 2 tablespoons brown sugar into each squash half.
  • Bake another 30 minutes.
  • To serve, you can scoop out the insides and place in a dish, or just eat it right out of the squash (which is what we did!)
