- 1 whole large onion (sliced very thin)
- 2 cups buttermilk
- 2 cups all purpose flour (or gluten free flour blend)
- 1 scant tablespoon table salt
- 1/4 - 1/2 teaspoon cayenne pepper
- 1 - 2 quarts Canola oil
- Salt and freshly ground black pepper to taste
Place sliced onions in a baking dish, cover with buttermilk, and soak for at least an hour.

Heat oil to 375 degrees F in a Dutch oven. Grab a handful of onions, throw into the flour mixture, tap to shake off excess, and plunge into hot oil. Fry for a few minutes and remove as soon as golden brown. Season with salt and pepper as desired and serve immediately.
