Fancy Turkey Chili combines ground turkey (or beef) with lots of veggies into a hearty chili that can be served alone or over rice.

- 1 tablespoon olive oil
- 2 garlic cloves (minced)
- 1/2 cup chopped green onion
- 1/2 pound lean ground turkey or beef
- 2 tablespoons chili powder
- 28 ounces canned fire-roasted diced tomatoes
- 15 ounces canned black beans, rinsed and drained (optional)
- 1 medium bell pepper (cored, seeded, and diced)
- 4 carrots (peeled and grated)
- 1/2 teaspoon brown sugar
- Pinch of salt (more to taste)
For Serving:
- sliced green onions
- sour cream,
- cooked rice
In a large saucepan, heat the oil over medium heat. Add the garlic and green onions, and cook for about 1 minute.
Add the ground turkey or beef and cook until browned, about 5 minutes.
Stir in the chili powder until fully combined.
Add the tomatoes, beans, bell pepper, carrots, brown sugar, and salt. Bring the mixture to a boil, then reduce the heat to low.
Cover and simmer the chili for 15 minutes.
Adjust salt if necessary, and serve over white rice with a dollop of sour cream and garnish of sliced green onions.
