Fancy Turkey Chili

Fancy Turkey Chili combines ground turkey (or beef) with lots of veggies into a hearty chili that can be served alone or over rice.

Ingredients
  

  • 1 tablespoon olive oil
  • 2 garlic cloves (minced)
  • 1/2 cup chopped green onion
  • 1/2 pound lean ground turkey or beef
  • 2 tablespoons chili powder
  • 28 ounces canned fire-roasted diced tomatoes
  • 15 ounces canned black beans, rinsed and drained (optional)
  • 1 medium bell pepper (cored, seeded, and diced)
  • 4 carrots (peeled and grated)
  • 1/2 teaspoon brown sugar
  • Pinch of salt (more to taste)

For Serving:

  • sliced green onions
  • sour cream,
  • cooked rice

Instructions
 

  • In a large saucepan, heat the oil over medium heat. Add the garlic and green onions, and cook for about 1 minute.
  • Add the ground turkey or beef and cook until browned, about 5 minutes.
  • Stir in the chili powder until fully combined.
  • Add the tomatoes, beans, bell pepper, carrots, brown sugar, and salt. Bring the mixture to a boil, then reduce the heat to low.
  • Cover and simmer the chili for 15 minutes.
  • Adjust salt if necessary, and serve over white rice with a dollop of sour cream and garnish of sliced green onions.
