Bacon mixed with mayonnaise and green onion and stuffed inside hollowed cherry tomatoes. A delicious bite sized appetizer that is low carb and gluten free!

- 1 pound bacon or 1 package turkey bacon (see note)
- 1/2 cup chopped green onions
- 1/2 cup mayonnaise
- 24 cherry tomatoes
Place tomatoes stem side down and cut a thin slice off of the top. With a small spoon, scoop out the pulp. Invert tomatoes on paper towels 30 minutes to drain.
Cut bacon into pieces (~1/4 inch) and fry until crisp. If using turkey bacon, cook the strips of bacon and then cut or crumble afterwards. Let cool.
In a bowl, mix bacon, green onions, and mayo.
Fill tomatoes with bacon mixture. Refrigerate several hours or overnight.
I use thick-cut bacon because Bob prefers it. For turkey bacon, I recommend Oscar Mayer brand.
