A healthy Baked Oatmeal recipe that will fill the air with the smell of freshly baked oatmeal cookies. Use your favorite dried fruit for a hearty, filling breakfast.

Equipment

  • 8-inch square baking dish

Ingredients
  

  • 2 cups old fashioned oats (rolled oats)
  • 1/2 cup packed light or dark brown sugar
  • 1/3 cup raisins (or dried fruit of choice)
  • 1 tablespoon chopped walnuts (or nut of choice, optional)
  • 1 teaspoon baking powder
  • 1 1/2 cups milk
  • 1/2 cup applesauce
  • 2 tablespoons butter (melted)
  • 1 large egg (beaten)
  • Cooking spray

Instructions
 

  • Preheat oven to 375°F. Coat an 8-inch square baking dish with cooking spray.
  • Combine the first 5 ingredients (or 4 if omitting nuts) in a large bowl.
  • In a separate bowl, combine the milk, applesauce, butter, and egg. Add milk mixture to oat mixture; stir well.
  • Pour oat mixture into prepared dish. Bake for 20 minutes, or until baked through. Serve warm.

Notes

I had to bake longer than 20 minutes.
